Sweet P's Turkey Cups

Driving home from work Friday afternoon, I was going over the usual "to do" list in my head. I'm really not the best cook, so when I got to the dinner portion of my "to do" list, I blanked. I blanked, and then, like in one of those old Tom & Jerry cartoons, a light bulb went off. I love light bulb moments!
I remembered that I had a package of ground turkey, as well as some left over egg roll dough in the fridge, and a recipe was born.
My munchkin loved it! I think yours might too.
Ingredients
1 pkg of organic ground turkey
1 egg
1 cup bread crumbs
1 tsp basil
1 tsp sea salt
1/2 tsp pepper
1 pkg pre-cut egg roll dough
1 cup tomato sauce
1 cup water
Directions
In a medium mixing bowl, mix your turkey, egg, and breadcrumbs by hand until all ingredients are well incorporated.
Add salt, pepper and basil.
In a large saucepan, whisk tomato sauce and water and bring it to a boil.
Roll the ground turkey mixture into 1 inch balls and place into the boiling tomato sauce.

While your turkey meatballs are cooking, take your egg roll dough and line it along the bottom of a muffin tin or small corning wear.

When your meatballs have finished cooking, place about 3 in each muffin tin or corning wear.

Place in oven for 10-15 minutes, or until dough becomes golden brown.
Let cool for 20 minutes and voila! Toddler meal served!!
